Pavlova For Australia Day!

Celebrate Australia Day with a yummy pavlova. This iconic dessert is a must-have for any Australia Day celebration, and with all of our favorite summer fruits now in season, there are lots of tasty, fresh toppings to choose from.

Ingredients

  • 6 eggs, separated
  • 1 1/4 cups caster sugar
  • 2 tsp Cornflour
  • 1 tsp white vinegar
  • 1/2 tsp vanilla extract
  • 300ml thickened cream
  • 2 tbsp pure icing sugar, sifted
  • juice of 2 limes
  • Finely shredded rind of 2 limes
  • 2 bananas, thinly sliced diagonally
  • 3 golden kiwifruit, peeled and sliced
  • Pulp of 2-3 passionfruit

Step 1

Preheat the oven to 120 degrees Celsius. Using foil, line an oven tray. Brush with melted butter and cornflour. On foil, draw a circle with a diameter of 24cm.

Step 2

In a clean dry dish, beat egg whites until soft peaks form using an electric mixer. Gradually add sugar, 1 tablespoon at a time, beating thoroughly after each addition, until the meringue is thick and glossy and the sugar is completely dissolved. Whisk together the cornflour, vinegar, and vanilla until smooth. With the designated circle as a guide, spoon the meringue onto the foil. Pavlova with smooth sides and top Form miniature peaks around the edge of the pavlova with a little spatula. Preheat oven to 150°F and bake pavlova for 1 1/2 hours or until dry to the touch. Turn the oven off. Allow pavlova to cool completely in the oven with the door ajar. Transfer to a serving plate when entirely cool, or store in an airtight container until needed.\

In a bowl, beat the cream and icing sugar with an electric mixer until peaks form. Using a spoon, spread cream on top of the pavlova. Fill a ceramic or glass bowl halfway with lime juice.
