DIY Cactus Cupcakes

Since we posted the picture of DIY cactus cupcakes on our Instagram our Direct Messages were flooded requesting the tutorial. As per your request here goes the tutorial for edible house plants. The cacti cupcakes are based on baked chocolate mousse which makes it looks like soil and I have used green colour macaroons to create the cute cactus plant. With this tutorial you will be able to make 2 dozen of mini cacti cupcakes. First, we are going to make the chocolate mousse cupcakes Yield: 24 mini cupcakes
Prep Time: 15 minutes
Cook Time: 10 minutes per pan

INGREDIENTS: (For the soil like base)

1 ½ cups of milk chocolate
3 large eggs, beaten
1/4 cup all-purpose flour
Pinch of vanilla extract
Chocolate sauce and chocolate shavings, for garnish

DIRECTIONS:

Preheat oven to 325°F. Grease 12 mini muffin cups. Place the chocolate in a microwave-safe bowl. Heat at half power in the microwave for 30 seconds until the chocolate melts when stirred. Stir until smooth. Set aside to cool but do not let it harden. Mix the eggs and flour in a large bowl and beat until combined and smooth. Add the chocolate and beat until thoroughly mixed and smooth. Add vanilla extract to the mixture. Do not overfill muffin cups only fill 2/3 of the cups. Bake 8 to 10 minutes, the best way to know its properly baked is check whether the edges are browned, and centres shake slightly. Cool in the pan on a wire rack for 20 minutes then carefully remove them and let cool completely. Run a knife between the pan and the cupcake to loosen the cupcake if necessary. Garnish melted chocolates and chocolate shavings.

Decoration (For the cacti plant)

72 Green Macaroons (in 3 varied sizes)
White Icing
Edible fondant flowers (Optional)
Place the biggest macaroon on the chocolate mousse cake and paste 2 smaller macaroons on the top of it. Draw dots on the large macaroon to make it look prickly and the add edible flowers to decorate. Enjoy the cute little house plants!
