Chocolate Caramel Bites

Ingredients

1/4 cup raw sugar
1/2 tsp vanilla essence
An egg
125g butter, softened
1 1/2 cups flour
1/4 cup chocolate powder
1/3 cup caramel Filling
100g chopped chocolate

How to Make

Step 1. Add butter, sugar and vanilla together and beat until light and fluffy by using an electric beater. Add egg to the mixture and combine.

Step 2. Sift flour and cocoa powder over the butter mixture and stir to combine all ingredients. Remove ¼ of the dough and shape both portions into a disc. Wrap with cling wrap and refrigerate for 15 minutes.

Step 3. Using a large portion of dough, shape level tablespoons of the mixture into bar shapes. Line 2 large baking trays with baking paper and place the shapes onto the trays. Using a butter knife, make a 1cm x 3cm indentation in the centre of each rectangle and fill each centre with 1 teaspoon of caramel.

Step 4. Preheat the oven for 180 degrees.

Step 5. Grab the remaining dough and roll the dough between 2 sheets of baking paper until 5mm thick then cut into rectangles. Re-roll scraps and repeat step to make approx 15 rectangles. Place 1 rectangle on top of each caramel-filled bar and press lightly to seal. Freeze for approx 15 minutes then back for 8-10 minutes.

Step 6. Once baking is finished, leave on trays for an additional 10 minutes then transfer to a wire rack to cool completely

Step 7. Place chocolate in a heatproof, microwave-safe bowl and microwave on medium settings for 2 minutes, stirring every 30 seconds with a metal spoon or until melted and smooth. Dip top side of 1 bar into chocolate, gently shaking off  excess chocolate. Place the bar, chocolate-side up, on a wire rack set over a baking tray lined with baking paper, and set aside to set.

Step 8. Once set, enjoy your caramel bites that can jazz up any occasion or even as a sweet treat for your loved ones
