Sparkling Rainbow Cookies

These butter cookies coated with rainbow sparkling sugar are a great holiday treat and it can be served in every occasion. They are in assorted colours, sparkling and super delicious. And it is very easy to make them. How fun! The ingredients combined will make 4 – 5 cookies depending how thick you want them to be.

INGREDIENTS

1 cup unsalted butter
1 cup white sugar
2 egg yolks
1 teaspoon vanilla extract
2-1/4 cups flour
1/4 teaspoon salt
sparkling sugar in rainbow colours

DIRECTIONS

Combine butter and sugar in a large bowl then beat in the yolks one at a time. Add vanilla to the mixture and stir it. In separate bowl, combine flour and salt. Mix flour mixture into the creamed mixture. Shape dough into logs about 1 and 1/2 inches in diameter. Wrap it and keep in the refrigerator until the logs freeze. Preheat oven to 350 degrees F (175 degrees C). Unwrap rolls. Let sit at room temperature for about 15 minutes if refrigerated. Keep it longer if it is frozen. Sprinkle sparkling sugars onto the top of dough and gently press down. Let the sugar stick on it. Cut into approximately 3/8-inch-wide slices. Place slices 2 inches apart onto a parchment paper. Bake for approximately 1o minutes in the preheated oven. Check when the edges of cookies start to get a golden brown and then remove to a wire rack and let it completely cool down.
